This is a recipe for a traditional honey cake. It is quite a dense cake that improved with keeping a few days.
2 tablespoons runny Kentish honey
2 tablespoons butter, softened
2 Bramley apples
teaspoon bicarbonate of soda
5oz plain flour
3 tablespoons milk
Pre-heat the oven to Gas Mark 4/350F/180C. Cream together the honey and the butter. Peel, core and grate the apples into the mixture. Add the bicarbonate of soda. Add the flour and enough milk to form a soft dough. Pour into an 8" cake tin, and bake for an hour and a half. Sprinkle with icing sugar to serve. A variation on this recipe is to use 1 teaspoon cinnamon sieved in with the flour.
For a quick dessert, serve this cake warm with custard - yum!
